1.5kg beef shin, shoulder and neck, cut into bite sized pieces
2 cloves garlic, chopped
1 bottle red wine
6 rashers chunky bacon, chopped
3 brown onions, roughly chopped
2 Flavorite tomatoes, roughly chopped
4 carrots, roughly chopped
4 shallots, roughly chopped
3 sprigs fresh thyme
2 bay leaves
1 cup chopped flat Italian parsley
2 tbspns butter
1 tspn cumin powder
Salt and pepper
- Marinate the beef and garlic in the wine overnight. Place the marinated meat in the pressure cooker along with all other ingredients and cook until meat is tender.
- Remove pressure cooker from heat. Remove most liquid from the stew and place in a pot. Simmer until liquid reduces.
- Add a little sour cream. Add stew to reduced liquid. Mix well.
- Serve with whole boiled potatoes.
