Whole roasted tomatoes

6 plum Flavorite tomatoes, halved

Small sprigs fresh thyme

1 fat clove garlic, finely chopped

4 tblspn extra virgin olive oil

Salt flakes


Slice tomatoes lengthways and arrange cut side up on a wire cooling rack on a baking tray. Combine thyme, garlic, oilve oil and salt and pepper to taste and spoon over each tomato. Roast in a preheated slow oven for 1 1/2 – 2 hours or until tender.
