Vegetarian pizza

2 Zucchini sliced

2 Slender eggplants, sliced

4 Artichoke hearts, sliced

2 Large pieces Lebanese bread

1/2 Cup fat-free tomato salsa

1/2 Cup low fat cottage cheese with onion and chives

30g grated reduced fat swiss cheese

12 Flavorite cherry tomatoes halved

8 Pitted olives

Spray vegetables with olive oil and char grill for 2-3 mins or until golden brown.

Preheat oven to moderate 180c and place bread onto baking trays. Spread with salsa and top with vegetables, cheeses, cherry tomatoes and olives. bake for 20mins. Cut into pieces and serve hot.
