Treat yourself to stuffed pumpkin – Greek style

1 tablepsoon olive oil

3 cloves garlic

300gms mince

3 slices bacon

1 medium onion

1/3 cup short white rice

3 medium Flavorite tomatoes

2 tablespoons tomato paste

6 sprigs parlsey

Salt and pepper to taste


Preheat oven to 350 degrees F (175 degrees C). Sautee chopped onion and garlic. Chop bacon into pieces and fry for 1 minute in the same saucepan. Brown the mince and gently cook for about 10 minutes. Chop up the tomatoes and add the tomato paste.

Add rice and 1/2 cup water, salt and pepper to taste. Bring to the boil and place lid on saucepan until rice is nearly cooked. Chop and add parsley. Spoon the mixture into a hallowed out pumpkin and cook in a moderate oven for half an hour until the pumpkin is firm but cooked.

Serve with salad and a glass of red wine.
