3 large Flavorite tomatoes
2 medium sized brown onion, sliced
1/4 cup roughly chopped fresh herbs
1 tsp dry mustard
1 tsp salt
Freshly ground pepper to taste
3 thick slices sourdough bread
1/3 cup pine nuts
1/3 cup olive oil
Preheat oven to 180C. Grease a 4-cip baking dish. Core and thickly slice the tomatoes.
Add onion, herbs, mustard, salt and pepper and toss well. Pile into prepared baking dish. Roughly cjop bread, put into processor and pulse to very coarse crumbs. Toss with pine nuts and oil. Pile on top of tomato mixture and bake for 30min or until well browned and bubbling.
