Tomato and lentil soup

2 onions, chopped

2 tbspns olive oil

4 cloves garlic, crushed

Two 410g cans crushed tomatoes

1 cup red lentils

1 litre chicken stock

Pinch cayenne pepper

Juice of 2 oranges

Saute onions and garlic in the olive oil until soft, but not brown. Add tomatoes, lentils, stock and cayenne pepper and stir. Bring to boil and then turn right down to simmer for about 20 minutes. remove from heat and add orange juice, then blitz in a blender
