The working mum

Serves: 4 kids

Prep time: 10 minutes

Cooking time: 75 minutes

1 head celery, grated

2 carrots, grated

2 onions, finely minced

300g mince beef

Salt and pepper to taste

1kg peeled fresh ripe Flavorite tomatoes

1 cup extr virgin olive oil

1 bunch fresh flat-leaf parsley

1 bunch fresh basil

Heat a non stick heavy based saucepan with olive oil and saute celery, carrots and onions. Saute for a few minutes on high then add mince and a pinch of salt.

Brown the mince. Add tomatoes, salt and pepper, parsley and basil. Reduce heat, cover and let mixture cook slowly for about an hour, or longer if you have the time, at least until the tomato sauce loses its acidity and takes on a richer sweet flavour.  Don’t forget to stir frequently to prevent meat from sticking.

Thirty minutes before you serve the meal start preparing the spaghetti. Bring the water to the boil, cook the spaghetti until al dente add a pinch of salt.
