Stuffed Tomatoes

Serves: 6

6 large Flavorite Tomatoes

3 bocconcini balls

400g can artichoke hearts, drained

3tbs pesto

1/3 cup chopped olives

Cuts tops off tomatoes and scoop out insides.

Finely dice bocconcini and cut artichokes into quarters.

Combine with pesto and chopped olives.

Season to taste and fill tomatoes. Replace top.
