Stuffed mushrooms

4 large field mushrooms or

8 Swiss browns

1 tomato, diced

1/2 red capsicum, diced

1 cup fresh breadcrumbs

1/4 cup gren olives, chopped

1/4 cup fresh parsley, chopped

1/4 cup olive oil

Salt and pepper to taste

Preheat oven to moderate. Remove stalks of mushrooms and chop finely. Combine with remaining ingrediants and fill mushroom caps with misture, pressing down well, until all the mixture is used. Place on baking tray and cook for 30mins or until browned on top.
