Spicy lamb meatballs

What you’ll need:

1 medium onion, chopped

3cm fresh ginger, peeled and chopped

3 garlic cloves

2 small red chillies, chopped

Bunch corriander, roots trimmed

2 tbs fish sauce

2 tsp cornflour

500g lamb mince

3 tbs vegetable oil for frying

400ml canned chopped tomatoes

2 tbs lemon juice

Put onion, ginger, garlic, chillies and half of the corriander (including scraped roots) into a processor and blitz to a mush. Tip into a bowl and add fish sauce, cornflour and mince. Mix well and form into walnut-sized balls. Fry in hot oil until browned. Add canned tomatoes to pan with lemon juice and simmer gently for 15 minutes. Serve in a bowl garnished with remaining corriander and skewers on the side.
