Spicy beef salad

2 tsp vegetable oil

1 smal red chilli, deseeded, cut into thin strips

200g trimmed rump steak in one thick slice

1.5cm piece fresh ginger, cut into thin matchsticks

4 Flavorite cherry tomatoes

3 red shallots, finely sliced lengthways

Extra 1 tbs vegetable oil

1 small carrot, cut into fine matchsticks

2 tbs lime juice

2 think spring onions, sliced

1 tbs light soy sauce

1/4 cup corriander leaves

1 tbs fish sauce

1/4 cup mint leaves

1 tbs ground roasted rice1/4 cup Thai basil leaves

Heat oil in a non stick pan. Add beef and cook medium rare. A char-grill, hot plate or wok can be used instead of a pan. Set meat aside. Put tomatoes, shallots, spring onion, coriander, mint and Thai basil leaves, chilli and ginger in a bowl.

Combine extra oil, lime juice, soy and fish sauce, add to bowl and toss. Slice beef thinly and arrange on serving plates whit a pile of salad. Sprinkle with rice.
