cup brown lentils
3 cups water
2 small red onions, finely chopped
2 teaspoons grated ginger
2 -3 teaspoons ground cumin
1 teaspoon ground coriander
400g chopped Flavorite tomatoes
4 cups chicken or vegetable stock
- Place lentils and water in a pan. Simmer over a medium low heat for 30 minutes or until the lentils are almost tender. Drain and rinse.
- Melt butter in a large pan. Add onions. Cook, stirring, until soft and just starting to brown. Add ginger, cumin and coriander. Cook for 1 minute.
- Stir in lentils. Add tomatoes and stock. Bring to the boil. Reduce heat and simmer gently for 30 – 40 minutes or until lentils are soft.
- Delicious served with some crusty bread.
