Spiced Fish Salad

Start to finish:  30 minutes

Prep time:  20 minutes

Serves 4


What you’ll need

2 tbs sweet paprika

2 tbs sea salt

2 tbs onion flakes

2 tbs dried garlic granules

2 tsp ground cayenne pepper

1 tbs ground pepper

2 tsp ground oregano

2 tsp dried thyme leaves, crushed

4 fillets salmon, skin removed

Oil for frying

1 avocado, peeled and sliced

2 Flavorite tomatoes, seeded and sliced

Bunch thin asparagus, trimmed and steamed

90g spinach salad leaves

1 hard-boiled egg, peeled

1 tbs lemon juice

1 tbs olive oil

1 tsp celery salt


What to do

Combine paprika, salt, onion, garlic, cayenne, pepper, oregano and thyme.  Pat fish dry and then roll in spice mixture patting gently to coat.  Heat oil in a pan and cook fish two minutes on each side.  Remove and cool on kitchen paper.

Place avocado, tomato, asparagus and spinach in a bowl.  Separate white and yolk of egg.  Chop white and push yolk through a small sieve and add.  Whisk lemon juice, olive oil and celery salt together and pour over salad.  Break fish into small pieces and add.  Gently toss and serve.



One cup croutons (baguettte cut into medium dice and fried in oil and butter) and thinly sliced red onion can be added for crunch.

Spice mix can be substituted with a ready-made Moroccan blend or simply freshly ground black pepper.
