Spagettini with Olives and Tomatoes

Cooking Time: 10 minutes



  • 400g spaghettini
  • 1 truss of Flavorite cherry tomatoes
  • 2 cloves garlic, crushed
  • 6 anchovy fillets in oil
  • 1 tbsp salted capers, rinsed
  • 2/3 cup mixed green and black pitted olives
  • 1/3 cup picked basil leaves
  • 3 tbsp olive oil
  • freshly ground pepper


  1. Preheat oven to 180’C (fan forced to 160’C)
  2. Put Flavorite truss cherry tomatoes on a baking tray and sprinkle with olive oil. Roast for 10 minutes
  3. Cook spahettini according to packet directions. Drain, reserving about 1/2 cup cooking water.
  4. Add reserved water to pasta with anchovies, capers, olives, basil leaves, oil and pepper
  5. The anchovies and capers will be salty so be careful adding extra salt
  6. Toss and serve topped with roasted Flavorite cherry tomatoes
