Smoked trout & dill mini frittatas

These pretty bite size are exceptionally easy and quick to whip up and comprise the protein component of your party fare.

It’s likely that your guests will eat about two to three each. Makes 20

4 eggs

100g low fat ricotta

3 shallots, finley chopped

2 tbs dill, finley chopped

1 tbs mint, finely chopped

100g smoked trout, flaked

Cracked black pepper

10 Flavorite cherry tomatoes

Beat the eggs and ricotta together. Combine the egg mixture with the shallots, dill, mint, smoked trout and season with black pepper.

Pour the mixture into very well greased mini muffin trays. lay half a cherry tomato on the top of each fritata. bake at 160C degrees for 20 mins.
