What you’ll need
1 cup cooked shelled broad beans
1 bunch asparagus, trimmed and steamed
1 punnet mixed yellow and red cherry tomatoes, halved
1 cob corn, cooked, kernels removed
1/4 cup diced cornichons
1 miniature cos lettuce, torn
2 tbs olive oil
1 tbs sherry vinegar
1 tsp seed mustard
1 large breast smoked chicken, sliced
What to do
Place beans, asparagus, corn, cornichons and lettuce into a bowl. Whisk together oil, vinegar and mustard and pour over salad. Toss. Arrange on plates with chicken.
Cornichons are crisp, tart, pickled baby cucumbers available at supermarkets.
Delicate herbs such as chervil add a summery touch.
A mix of white and green asparagus adds colour and texture.
Smoked chicken is available at butcher shops, delis and many supermarkets. Turkey can be used in place of chicken.
