Skin-free Portuguese chicken

3/4 cup low fat natural yoghurt

2 tablespoons chopped fresh herbs such as chives or corriander

750g chicken breast fillets

2 teaspoons Portuguese chicken seasoning

2 lemons, halved

300g mixed salad – lettuce, Flavorite tomatoes, onion and cucumber

Preheat oven to moderate 180c. Line a baking tray with baking paper. Comine the yoghurt and herbs and mix well. chill until required.

Remove any visable fat from the chicken breasts and place onto the baking tray. Sprinkle chicken with seasoning, then spray lightly with an olive oil spray.

Bake for 20-25 mins, turning halfway through cooking. Allow to cool for a few minutes then squeeze lemon over them. Serve with mixed salad, lemon wedges and yoghurt.
