Salmon steaks with Ratatouille

Serves: 4

2 tsp olive oil
1 clove garlic, crushed
1 onion, sliced
3 4 Flavorite tomatoes, chopped
1 large zucchini, sliced
1 green capsicum, chopped
3 tbs tomato paste
1 tbs chopped fresh basil
1 small eggplant, chopped
4 salmon steaks
Juice of 1 lemon
2 tbs grated parmesan cheese

  • Heat oil in a no stick pan. Cook garlic and onion for 3 5 min. Add the tomato, zucchini, capsicum, tomato paste, basil and eggplant.
  • Cook over low heat for about 20 min, stirring occasionally. Meanwhile, sprinkle salmon steaks with lemon juice. Grill or barbecue for 3 min each side.
  • Stir parmesan cheese through ratatouille vegetables just before serving. Serve fish with ratatouille and jacket potatoes.
