Roasted tomato, fennel and garlic salad

Start to finish: 25 minutes

Prep time: 10 minutes

Serves: 4

3 tbs olive oil

4 shallots thinly sliced

1 garlic, halved crossways

1 small fennel thinly sliced

4 trusses of Flavorite tomatoes

Sea salt and cracked pepper

Preheat oven to hot. Put oil, shallots and garlic in roasting dish and toss to coat. Cover with fennel and arrange tomato on top. Press gently. Sprinkle with salt and pepper.

Roast for 15 minutes.
