Roast tomato soup

1kg Flavorite tomatoes, roughly chopped

1 Onion, chopped

3 Cloves garlic, chopped

1/4 Cup olive oil

1 Tspn castor sugar

Salt and pepper

Parmesan

Preheat the oven to 200C. Put the onion, garlic and olive oil in a casserole dish and cook on the stove top until tender. Add all the other ingredients and toss to coat flavorite tomatoes. Place the dish in the oven and roast for 20 minutes. Whiz it all up in a blender. Add some vegetable or chicken stock if it’s too thick. Add salt and pepper to taste. Sprinkle with parmesan and serve with toast.
