Chorizo and tomato salad

 

Start to finish: 35 minutes

Prep time: 25 minutes

Serves: 6

6 medium sized Flavorite truss tomatoes

1/2 cup thinly sliced red onion

1/4 cup mint leaves

Salt flakes and freshly ground pepper

1 tbs sherry vinegar

2 tbs extra virgin olive oil

1 large chorizo, sliced

50g toasted pinenuts

Cut the tomatoes into wedges and put in a bowl with the onion and mint then drizzle with the vinegar and oil. Cover and leave.

Cook the chorizo in a hot non stick pan unti browned on both sides. Add to tomato salad, toss and serve.  Drizzle with a little oil from the pan and pine nuts.
