Quick Tomato Sauce

Serves: 4-6

1/4 cup extra virgin olive oil

1 small onion, finely chopped

1 large garlic clove crushed

500g fresh diced Flavorite Tomato

1/4 cup white wine

1/4 cup torn basil leaves

  • Heat oil in a large heavy-based pan and cook onion and garlic until transparent.
  • Add tomatoes and cook until slightly soft.
  • Add wine and allow to reduce over low heat. Add basil and season.
  • Cook 15 – 20min until tomatoes have broken down and thickened the sauce. Toss through freshly cooked pasta.

Note: You can use this sauce as a base and include other ingredients such as olives, capers, drained canned tuna and vegetables and shellfish.
