Quick and easy tomato and spinach lasagna

Cheese Sauce:

30g butter

1 1/3 cups milk

1/4 cup plain flour

1/2 cup grated cheese


1 tbspn oil

1 clove garlic, chopped finely

140g tomato paste

240g instant lasagna sheets

1 onion, finely chopped

810g canned tomatoes

1/2 cup parsley, chopped

6 spinach leaves



Melt butter and stir in flour. Gradually adding milk, stirring until sauce thickens. Stir in cheese.


Grease a large rectangle lasagna dish. In a frying pan, heat oil, add chopped onion and garlic and cook until soft. Add canned tomatoes and tomato paste. Bring to the boil and simmer uncovered for 15 minutes. Remove from heat and add parsley. Spread 3 tbspns mixture over the base of the dish, cover with pasta sheets and spread over third of cheese sauce. Cover with spinach leaves. Repeat layers, ending with tomato mixture.

Bake at 160c for 35 minutes.
