1 piece topside (1kg plus)
1 chopped onion, or a few little ones
1 can tomatoes
1 can sliced mushrooms (or fresh if available)
1/2 cup red wine
1/2 cup water
salt and pepper
1 tspn mixed herbs
In a heavy cast-iron casserole dish, brown meat all over then remove while browning onions (and mushrooms if using fresh). Return meat to pan and add the rest of the ingredients. Cover and cook gently until cooked.
Two hours is enough for a 1kg piece. Check for seasoning and liquid. (You may need to add water.)
This makes a delicious sauce as it cooks. Remove meat and rest before slicing and serving with sauce. Great with potato mash and green vegetables.
This recipe is handy for busy cooks. Once you get everything into the pot you can feed animals, get the firewood and bathe the kids before dinner.
