Poached salmon with tomato and red onion salsa

150-200g salmon steak

1.5cm fresh ginge, halved

1cm slice of onion

10 whole peppercorns

1 bay leaf

Dash tamari soy sauce

1 cup vegetable stock


1 small tomato diced

1 capsicum diced

1 red onion diced

1 avocado diced

1 cup fresh basil leaves

Dash balsamic vinegar

Lime or lemon juiced

Orange juiced

Cracked pepper and vegetable salt

Combine salsa ingrediants, mix well, then set aside for 30mins. Place ginger, onion, peppercorns, bay leaves, tamari and stock in a deep fry pan and simmer gently for five minutes.

Add fish, cover the pan and poach for 8-10 minutes. Remove the salmon and serve with the salsa mix and accompany with green salad.
