Pasta with Fresh Tomato Sauce

500g Linguine, Fettucine or Spaghetti Pasta

4 Large, ripe Flavorite Tomatoes, diced

1/2 Cup Cucumber, diced

1 clove Garlic, minced.

1/4 Cup Fresh Basil, chopped or tbsp dried

1/4 Cup Fresh mint, chopped or tbsp dried

2 tblspn Fresh Italian parsley, chopped

2 tblspn Olive Oil

1 tspn Salt

1/2 tspn pepper

  • Place all ingredients except pasta in large bowl and mix together.
  • Let stand at room temperature for at least 2 hours before serving.
  • Bring a large pot of salted water to boil. Add pasta and cook until tender yet firm, about 10 minutes.
  • Drain and toss well with sauce.
  • Makes 4 servings.
