500g Linguine, Fettucine or Spaghetti Pasta
4 Large, ripe Flavorite Tomatoes, diced
1/2 Cup Cucumber, diced
1 clove Garlic, minced.
1/4 Cup Fresh Basil, chopped or tbsp dried
1/4 Cup Fresh mint, chopped or tbsp dried
2 tblspn Fresh Italian parsley, chopped
2 tblspn Olive Oil
1 tspn Salt
1/2 tspn pepper
- Place all ingredients except pasta in large bowl and mix together.
- Let stand at room temperature for at least 2 hours before serving.
- Bring a large pot of salted water to boil. Add pasta and cook until tender yet firm, about 10 minutes.
- Drain and toss well with sauce.
- Makes 4 servings.
