Passionfruit and Tomato Jam

Preparation: 1 hour
Cooking time: 50 mine
Makes about: 3 cups

1 kg ripe Flavorite Tomatoes
cup fresh passionfruit pulp
1 kg sugar

  • Plunge tomatoes into a pan of boiling water for 2 min, drain and refresh in a large bowl of ice cold water. Remove skins, and roughly chop tomatoes.
  • Place half the passionfruit skins in a pan and cover with water. Bring to the boil fro 1 hour. Allow to slightly cool and scoop out the soft pulp from inside. Discard the skins.
  • In a large heavy based pan, add tomatoes, fresh passionfruit pulp, pulp from skins and the sugar. Stir over a slow heat until the sugar is dissolved. Bring to a rapid boil and cook for about 50min or until the jam sets when tested on a cold saucer.
  • Pour into sterilised jars and seal.
