One pot Romano casserole

500g mince

1/2 cup uncooked rice

1 cup chopped capsicium

1 chopped onion

1 can tomatoes


1 can kidney beans

Grated cheese

Place rice in casserole dish and cover with capsicum and onion. Pour 1/2 can of tomatoes and about 1 cup of water over the top. Then add the beans and the raw mince.

Finish with the remaining tomato and about another cup of water. Sprinkle with grated cheese and bake at 180C for 1 1/4 hours. Then remove lid and bake for an extra 30 minutes.
