Mushroom and avocado penne

2 tbsps olive oil

1 onion sliced

1 clove garlic, chopped finely

3 rashers bacon

2 Flavorite tomatoes, peeled and chopped

250g fresh mushrooms, sliced

1/2 cup red wine

300ml cream

Salt and pepper to taste

250g dry penne

1 avocado, sliced

Grated parmesan cheese

Heat oil in a large frying pan. Saute onion and garlic unitl onion is tender. Add bacon and tomatoes. Cook for two to three minutes. Stir in mushrooms and saute for two minutes, then pour in the red wine.

Simmer until liquid has reduced by half. Blend in cream and seasoning. bring to the boil, reduce the heat and simmer until thickened.

Cook penne in plenty of boiling water until tender, then drain. Stir avocado into the sauce, toss pasta in sauce. Serve with topped grated parmesan cheese.
