Minestrone pasta soup

2 tbsps olive oil

1 tbsp minced garlic

2 tbsps dried Italian herbs

1 large onion, diced

2 large carrots, peeled and chopped

400g can tomatoes

400g can kidney beans (undrained)

1 cup macaroni pasta

4 cups chicken stock

1/2 cup grated parmesan cheese

Crusty bread sliced to serve

Fresh herbs to garnish

Heat oil in a large pan, add garlic, herbs, onions and carrots, cook until vegetables are soft and fragrant.

Add all other vegetables and liquid stock, then simmer for about 30 minutes, stirring occasionaly (the vegetables should be tender). Serve and sprinkle with cheese, serve with bread, garnish with herbs.
