2 tbspn olive oil
1 2 garlic cloves, crushed
3 medium Flavorite tomatoes, diced
1/3 cup shredded basil or a pinch of dried basil
2tspns lemon juice
250g firm tofu, cubed in 1cm cubes
- Mix all ingredients together. Cover and leave in fridge for two hours.
- Serve on buttered toast.
