Lentil and tomato soup

1 cup yellow lentils

7 cups water

1 tbs olive oil

2 medium onions, chopped

4 cloves garlic, crushed

1-2 tsp salt

2 tsp cumin

2 tsp finely grated ginger

1 tsp ground coriander

1/2 tsp freshly ground black pepper

1/4 tsp cayenne pepper

2 cups diced canned tomatoes

1/4 lemon juice

2 tbs chopped parlsey or corrainder


Thoroughly rinse lentils and place in a pot with water. bring to the boil, cover and cook over medium heat for 25min. Meanwhile, heat oil in a pan, add onions and garlic and cook about 10 min or until they turn golden. Add salt, cumin, ginger, corriander black and cayenne peppers.

Cook 3min. Stir in tomatoes and simmer 5 mins. Add onion mixture to lentils and bring to boil. Cover and cook over low heat for 20 mins or until lentils are cooked. Stir in lemon juice and serve garnished with chopped parlsey or corriander.
