800g Clean Monkfish
2 table spoons olive oil
1 white onion
1 red capsicum
60g ripe Flavorite tomatoes
2 garlic cloves
5 table spoons white wine
Cut the fish in cubes and season with salt, pepper and juice of 1 lemon. In a saucepan cook lightly the olive oil with the onions cut in thin slices, the capsicum cut in thin strips, the tomato cut in round slices and the chopped garlic.
When the onions turn soft, add the wine. Clean the other lemon and cut in round thin slices, put them over the sauce and over that distribute the fish. Sprinkle the chopped parsley on top. When it starts boiling, cover the saucepan and cook in low heat for 15 minutes. Then taste and adjust salt and pepper to your taste. Serve very hot with white rice, green beans and black olives.
Tip: Drink the same kind of wine used to cook the fish.
