Layered Salad

1 purple lettuce

1/2 green lettuce

3 cups frozen peas

4 hard boiled eggs

300g button mushrooms, sliced

250g grated light tasty cheese

1 1/2 cups light mayonnaise

4 tblspns light sour cream

4 tblspns French mustard

1 tblspn lemon juice

8 spring onions, diced

250g bacon pieces

2 trusses of Conchita Cherry tomatoes

4 tblspns chopped parsley

  • Wash and tear lettuce, place in bowl, put frozen peas over lettuce.
  • Put hard-boiled eggs on top of peas and place sliced mushrooms around edge of bowl. Top with grated cheese. Combine mayonnaise, sour cream, mustard, lemon juice and spring onions, mix well and pour over cheese. Make day before if needed, cover and put in fridge.
  • Next day cook bacon in microwave, place tomatoes around edge of bowl. Top with bacon and parsley.
