Lambs fry with mushrooms and Tomatoes

4 tbs olive oil
1 kg lambs fry, cut into thin pieces
4 rashers rindless bacon
1 large onion, thickly sliced
1 cup sliced button mushrooms
cup white wine
4 medium Flavorite Tomatoes chopped
2 tbs chopped parsley

In a heavy based pan heat 2 tbs oil. Add the lambs fry and lightly brown for 1 min on each side. Remove and set aside in a warm place. Add rest of oil to pan. Cut bacon into three, add with onion and mushrooms, cook 5 min. Add wine and cook until almost evaporated. Add Flavorite tomatoes and parsley, cook 8 min. Return liver to pan, heat, season and serve.
