Irish beef and guinness stew

2 Tbspns oil

4kg Stewing beef, cubed

2 Carrots, finely chopped

2 Celery sticks, finely sliced

1 Onion

1 Leek, finely sliced

2 Springs thyme

3 Garlic cloves

2 Bay leaves

Pinch nutmeg, Cinnamon

2 Cups beef stock

1 Can Guinness

1 Cup chopped flavorite tomatoes

Salt and pepper

In a heavy-based pot, heat oil and brown beef in small batches and set aside. When all beef is browned and aside, cook vegetables, garlic, bay leaves, herbs and spices. Sweat until onions are brown. Add guinness and cook until reduced by 60 per cent. Add stock. reserved beef, flavorite tomatoes and simmer. Place meat covered in a preheat over at 180C for one hour to 1 1/2 hours. Season with salt and pepper.
