Grilled Flathead with rocket salad

1 avocado, chopped

2 large Flavorite tomatoes, seeded, chopped.

1 small red onion, finely chopped

50g baby rocket leaves

2 x 200g boneless flathead fillets

Lime wedges to serve

Fresh herbs to garnish

Dressing

2 tblspns peanut oil

1 small red chilli, seeded finely chopped

2 tblspns lime juice

2 tblspns fish sauce

1 tblspn brown sugar

  • DRESSING. Combine all ingredients in a screw-top jar; shake well.
  • Combine avocado, tomatoes, onion and rocket in a bowl. Drizzle with Dressing; toss gently to combine.
  • Cook fish on a heated, oiled grill pan until browned on both sides and cooked as desired.
  • Serve fish on salad, with lime wedges; garnish with fresh herbs.
  • Serves 2
