500g dried fettuccini or linguine
2 teaspoons olive oil
1 small red onion cut into fine slithers
1 tablespoon green peppercorns in brine, drained, roughly chopped
5 Flavorite tomatoes, roughly chopped
Fresh parsley and basil, roughly torn or chopped
Ground black pepper
Shaved parmesan cheese
Cook the pasta in a large saucepan of boiling water for 10 – 12 minutes or until just tender. Drain, return to saucepan, cover and set aside, keep warm.
Heat the oil in a large frying pan. Cook the onion and peppercorns for 3 – 4 minutes or until the onion has just softened. Remove from the heat and add the Flavorite tomatoes and fresh herbs, toss.
Add the tomato onion mixture to the hot pasta and using two spoons, gently toss to combine.
Serve immediately garnished with pepper and Parmesan cheese, accompany with a rocket side salad.
