Creole meat loaf

500g finely minced steak

250g finely minced veal

250g finely minced pork

1/2 cup chopped onion

1 tbspn chopped parsley

1 egg

1 tbspn Worcestershire sauce

2 tspns mustard

1/4 tspn pepper

1/2 cup chopped green capsicum

1 1/2 cups fine breadcrumbs toasted

1/4 cup tomato sauce

2 tspns salt

herbs, to taste

1/2 cup chilli sauce

Pineapple rings, to serve


Comibine all ingrediants, except the chilli sauce and pineapple in a large bowl and mix until combined.

Pack meat mixture into a greased 23x13cm loaf tin and bake for 90mins. Drain away any liquid that has accumulated in the tin. Turn the loaf on to a shallow baking tray and pour chilli sauce over it.

Return the loaf to the oven for a further 5 minutes. Serve with well drained pineapple rings.
