Chickpea soup with chorizo

Serves: 4


2 tbs vegetable oil

400g canned chickpeas

1/3 cup chopped shallots

400g can diced tomatoes

2 cloves, garlic

4 cups chicken stock

1/2 cup diced chorizo

2-3 tbs chopped parlsey


Heat oil in a pan. Add shallots and garlic and cook gently until soft. Add chorizo and cook 1 min. Add chickpeas, tomatoes, chicken stock and salt and pepper. Simmer 10-15min. Serve sprinkled with parlsey.
