This will take you: 30 mins + 30 mins standing time
500g greek style yoghurt
1 tablespoon fresh lemon thyme leaves
2 teaspoon chilli flakes
1 tablespoon olive oil
6 chicken breast fillets, trimmed
1 small garlic clove, crushed
1/4 cup chopped mint
2 green onion (shallots) finely chopped rocket, grilled truss tomatoes, to serve
Line a sieve with paper towel. Place yoghurt in sieve and let strain for 30 minutes, standing sieve over a dish. preheat barbecue on high heat. Combine lemon thyme, paprika, chilli flakes and oil in a large bowl. Season to taste and salt with pepper. Add chicken and turn to coat.
Combine yoghurt, garlic, mint and green onion in a bowl. Season to taste. Cook chicken breasts for 4 minutes on each side, until brown and cooked through. Serve with tzatiki, rocket and tomatoes.
