Chicken with sweet Tomato Sauce

1 tbspn virgin olive oil
2 garlic cloves, finely chopped
Pinch saffron threads
tspn ground ginger
tspn freshly ground black pepper
6 chicken pieces (about 1.5 kg),
or the equivalent pieces such as
wings or ribs
3 cups (500g) peeled and chopped
Flavorite tomatoes
1 onion, grated
2 tbspn chopped coriander
1 tspn tomato paste
1 tspn ground cinnamon
2 tbspn sesame seeds
Coriander leaves for garnish

off this tasty chicken recipe.

Mix together the oil, garlic, saffron, ginger and pepper in a small bowl, then rub into chicken and leave for eight hours or preferably overnight. Place the chicken and any marinating liquid in a large saucepan over medium high heat. Stir in the tomatoes, onion, coriander and cinnamon. Bring to boil. cover, reduce the heat and simmer for 40 minutes. Using a slotted spoon, transfer the chicken to a warm serving dish. Stir the tomato paste into the sauce in the saucepan. Increase the heat to medium- high and boil to reduce the sauce by half, stirring occasionally, for about 10 minutes. Stir in the honey and sesame seeds, lower the heat and simmer for another five minutes. Pour the sauce on top of the chicken. Garnish with coriander leaves and serve with couscous Or rice.
