Carpaccio smoked trout

250g thinly sliced smoked trout

2 Flavorite lebanese cucumbers, peeled

1 lemon peeled, cut into segments

Baby watercress

Arrange overlapping slices of trout in a circle on serving plates. Thinly slice cucumbers crossways and pile a quantity in the middle of each circle to form a ruffle. Whisk together dressing ingrediants, then drizzle over.

Decorate plate with lemon wedges and sprigs of baby cress.


1 tbs lime juice

1 tbs runny honey

1 tsp sesame oil

1/2 tsp finely chopped red chilli


Ready sliced smoked trout is available at fishmongers and delis.

Smoked salmon or thinly sliced bresaola can be used in place of smoked trout.
