Bocconcini and Artichoke Salad with Oregano Turkish Toast

Serves: 4

2 tablespoons olive oil

1 clove garlic, crushed

1 tablespoon finely chopped oregano leaves

Sea salt and cracked black pepper

4 slices turkish bread

100g baby spinach leaves

2 Flavorite Tomatoes, thinly sliced

4 bocconcini, halved

6 marinated artichke hearts, halved

2 tablespoons balsamic vinegar

  • Preheat a grill to high. Combine oil, garlic, oregano, salt and pepper.
  • Brush the bread with the oil mixture and grill for 2 minutes or until glden and toasted.
  • Combine spinnach leaves, tomatoes, bocconcini and artichokes.
  • Place the salad on the turkish toast, then spoon over the balsamic.
