Barramundi with tomato and basil

4 barramundi

Salt and pepper

2 garlic cloves, crushed

1 tbspn olive oil

1 bunch parsley, chopped

1 bunch basil, chopped

400g Flavorite tomatoes

1/2 lemon, zested

1/4 cup balsamic vinegar


Saute garlic in oil, add parsley, basil, tomaotes, vinegar and zest. Simmer for 10 minutes. Place barramundi on foil, season to taste and pour over sauce. Cover with foil, fold up to contain moisture. Barbecue for 20 minutes on low or until cooked. Serve with barbecued vegetables.
