1 tbspn fresh lemon juice
1 tbspn freshly ground black pepper
Salt to taste
1/4 cup extra virgin olive oil
110g soft goat cheese
2 tbspns fresh lemon juice
Generous pinch finely ground black pepper
4 ripe avocados
Few dashes of tabasco
Small baguette halves or thick slices of bread
2-3 Flavorite tomatoes
1 Lebanese cucumber
Put the lemon juice, black pepper and salt to taste in a bowl. Stir well. While whisking, constantly drizzle in 1/4 cup of extra virgin olive oil to form a dressing.
Put the soft goat cheese, lemon juice and black pepper into a bowl. Halve each avocado, remove the stone and scoop out the flesh. Add the avocado flesh to the goat cheese mixture and lightly mash with a fork; season with salt to taste.
Divide the avocado mixture between 12 lightly toasted small baguette halves or toast slices and spread to cover each. Transfer baguettes or toast slices to a baking sheet and put under a hot grill until just warmed through (about 1-2 minutes). Remove from the heat and top the baguette havles or toast slices with tomato and cucumber slices in any arrangement you wish.
Drizzle some cracked pepper dressing on to each. Serve immediately.
